- 16 ounces of cod fillets
- 1 Tbsp. lemon juice
- 4 slices of lemon
- ¼ cup butter, melted
- 1 Tbsp. parsley, chopped
- 1 tsp garlic, minced
- ½ tsp salt
- ½ tsp pepper
Step 1: Preheat the Oven
Preheat the oven to 400 degrees Fahrenheit. Then pick a large baking dish and line it with a baking sheet or non-stick spray.
Step 2: Prepare the Cod Fillets

Step 2: Mash the Cauliflower
Put the garlic and cauliflower in a food processor. Add the pepper, salt, and olive oil and purée until smooth. A hand blender and potato masher can also be used if there is no food processor available.
Step 3: Garnish the Dish
Add some chopped thyme into the mashed cauliflower to garnish. Add more flavor by adding some salt, pepper, and olive oil.
Step 4: Serve Hot
