1. Steak Salad with Butternut Squash and Cranberries

  • Cooking spray
  • 1 pack peeled diced butternut squash
  • 3/4 teaspoon kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided
  • 1 225 g sirloin steak
  • 3 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1/4 cup toasted hazelnuts, coarsely chopped
  • 1 teaspoon minced fresh rosemary
  • 1 pack baby spinach
  • 1/4 cup dried cranberries
  • 1 small shallot, thinly sliced
  • 1/4 cup of crumbled blue cheese


  1. Preheat oven to 425°F.
  2. In a half-sheet pan, arrange the butternut squash in a single layer and coat with cooking spray. Evenly add salt and pepper and bake at 425°F for about 15 mins or until browned, stirring halfway through baking.
  3. Place and heat a medium skillet over a medium-high fire and coat the pan with cooking spray. Add a dash of salt and pepper to the steak and place it into the skillet.
  4. Cook each side of the steak for about 4 mins or until you get the desired doneness.
  5. Transfer the steak on a cutting board and let it stand for around 8 to 10 mins. Cut it into thin slices.
  6. In a small bowl, mix olive oil, vinegar, rosemary, and a quarter of a teaspoon of salt.
  7. Line the spinach on a platter and top the butternut squash, cranberries, and slices of steak.
  8. Drizzle the salad sauce on top and sprinkle a little bit of cheese.

2. Steak, Feta, and Olive Quesadillas

  • 2 tablespoons extra-virgin olive oil, divided
  • 350 g sirloin steak, thinly sliced
  • 1 cup chopped fresh spinach
  • 12 Castelvetrano olives, chopped
  • 40 g 1/3-less-fat cream cheese
  • 1/4 cup of crumbled feta cheese
  • 4 (20 cm) pieces whole-wheat tortillas
  • 1/4 cup plain 2% reduced-fat Greek yogurt


  1. Cook the steak on a large skillet with a tablespoon of oil, medium-high, for 5 mins or ’til your preferred doneness.
  2. Add olives, spinach, cream cheese, and feta for another 2 mins. Set aside and clean the pan.
  3.  Scoop about 1/3 cup of the steak mix evenly over half of the tortillas and fold them.
  4. Add half a teaspoon of oil into the pan and place 2 quesadillas. Cook for 3 mins or until browned.
  5. Repeat for the remaining quesadillas and cut them into 4 wedges when done.
  6. Serve with yogurt.

3. Coriander-Crusted Flank Steak with Cuban Black Beans

  • 2 teaspoons cracked coriander seeds
  • 2 teaspoons cracked black pepper
  • 1 teaspoon kosher salt, divided
  • 1 450 g flank steak
  • 2 tablespoons olive oil, divided
  • Cooking spray
  • 1/2 cup chopped yellow onion
  • 1/2 cup chopped red bell pepper
  • 2 tablespoons unsalted tomato paste
  • 1/2 teaspoon ground cumin
  • 1/2 cup unsalted chicken stock (such as Swanson)
  • 1 teaspoon apple cider vinegar
  • 1 140 g can unsalted black beans, drained and rinsed
  • 3 tablespoons chopped fresh cilantro


  1. Preheat grill to medium-high, around 450°F.
  2. Mix coriander, 1/2 teaspoon of salt, and black pepper in a bowl. Rub the steak with the mixture and a tablespoon of oil.
  3. Coat the grill with cooking spray and add the steak. Cook each side for about 5 mins or until your desired doneness.
  4. Transfer steak on a chopping board and let it sit for 5 mins. Cut into thin slices.
  5. Heat 1 tablespoon of oil in a medium skillet on medium-high. Toss in bell pepper and onion and saute for about 3 mins.
  6. Add the tomato paste and cumin. Stir and cook for 30 seconds.
  7. Add the stock, half a teaspoon of salt, vinegar, and beans and cook for 3 mins. Stir in cilantro.

4. Meatloaf Burger Steaks with Tomato Gravy

  • 1 cup of cremini mushrooms, cut in half
  • 3 garlic cloves, peeled
  • 1 small carrot, trimmed and cut into 2.5-cm pieces
  • 1 celery stalk, trimmed and cut into 2.5-cm pieces
  • 1/2 small onion, peeled and cut into 2.5-cm pieces
  • 1/3 cup whole-wheat panko
  • 2 large eggs, lightly beaten
  • 450 g 90% lean ground sirloin
  • 1 tablespoon canola oil
  • 1/4 cup dry red wine
  • 1 teaspoon kosher salt, divided
  • 3/4 teaspoon black pepper, divided
  • 1 tablespoon water
  • 1/2 cup unsalted ketchup
  • 2 tablespoons honey
  • 1 tablespoon reduced-sodium Worcestershire sauce
  • half a kilo of Yukon Gold potatoes, cut into 5-cm pieces
  • 1/2 cup 1% low-fat milk
  • 1 tablespoon unsalted butter
  • 1 pkg. fresh microwave-in-bag broccoli florets
  1. Add the first 5 ingredients in a food processor and pulse 3-4 times.
  2. Mix eggs, panko, and beef to make the patties. Divide the mixture and make 4 4-cm thick patties.
  3. Heat large skillet with oil over medium-high. Add half a teaspoon of salt and pepper to each patty.
  4. Cook each side of the patties on the pan for 4 mins.
  5. Cook mushroom mixture on a pan for 6 mins. Pour wine and cook for another 2 mins or until liquid almost evaporates.
  6. Add Worcestershire, ketchup, honey. Stir and cook for 3 mins.
  7. Bring heat to low and add the patties. Cook for 6 mins turning to coat.
  8. In a medium microwave-safe bowl, add potatoes and a tablespoon of water. Microwave at high for 6 mins.
  9. Add butter, milk, 1/4 teaspoon of salt and pepper to the potatoes and mash to your desired consistency.
  10. Steam the broccoli and add 1/4 teaspoon of salt. Serve with mashed potatoes, patties, and sauce.

5. Mongolian Beef and Vegetables + Sesame Soba Noodles

Mongolian Beef

  • 340 g flank steak, thinly sliced
  • 1 tablespoon cornstarch
  • 3 tablespoons light brown sugar
  • 3 tablespoons water
  • 2 teaspoons toasted sesame oil, divided
  • 3 tablespoons reduced-sodium soy sauce
  • 2 teaspoons canola oil, divided
  • 4 cups broccoli florets
  • 1/2 cup thinly sliced white onion
  • 1/2 cup sliced carrot
  • 1 cup snow peas, halved diagonally
  • 1 tablespoon minced fresh garlic
  • 2 teaspoons grated peeled fresh ginger


  1. Coat the steak with cornstarch in a bowl. In another bowl, whisk sugar, 3 tablespoons of water, and soy sauce until smooth.
  2. Heat a large skillet over high. Add 1 teaspoon of sesame oil and 1 teaspoon of canola oil.
  3. Cook steak on the pan for 5 mins, stirring from time to time. Transfer the steak to a plate and keep warm.
  4. Bring heat to a medium-high and add 1 teaspoon of sesame oil and 1 teaspoon of canola oil to the pan. Toss in the broccoli, carrots, and onion and cook for 5 mins, stirring.
  5. Add garlic, ginger, and snow peas and cook for another minute.
  6. Add the steak and pour the soy sauce mixture into the pan and bring to a boil.

Sesame Soba


  • 170 g uncooked soba noodles
  • 1 1/2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons hoisin sauce
  • 1/4 cup thinly sliced green onions
  • 2 teaspoons toasted sesame seeds


  1. Cook soba noodles per packaging instructions. Drain, rinse under cold water and drain again.
  2. Whisk hoisin sauce, soy sauce, oil, and vinegar in a large bowl. Add and toss the noodles.
  3. Top with sesame seeds and green onions.
  4. Serve together with the Mongolian beef and veggies.
